Easy Gluten Free Peanut Butter Choc Chip Cookies

These Easy Gluten Free Peanut Butter Choc Chip cookies are everything. Their nutty, chocolately goodness is the perfect match to their crisp edges and chewy centre. Made with simple pantry staples in under half an hour they'll be your new best friend.

Flourless peanut butter cookies have been around for a little while now, and I have to tell you I was pretty gobsmacked when I first tried them. I couldn't believe you could get that crisp-but-chewy texture without flour, but having since made them a LOT I've had to accept that it is possible! You can choose what sort of peanut butter you want to use, but I would steer clear of the "health food" types. Stick to the thick, old-school varieties, they'll give a much better texture for these cookies.


My take on these cookies is to add a little vanilla (for that roundness of flavour it gives - it makes everything better, right??), and also some roasted, salted peanuts. I love salty/sweet flavour combinations, and the peanuts give that in spades. If you're not a fan though, feel free to leave them out!

How to Make Easy Gluten Free Peanut Butter Choc Chip Cookies

  1. Mix the Dough: this is a one bowl cookies recipe. I like to start by mixing the peanut butter with the sugar, salt and bicarb before adding the egg and vanilla. This just makes it a little bit easier to mix the egg in - it does tend to slide around the bowl a bit before it starts mixing in! Then it's just a matter of mixing in the chocolate chips and it's ready to go!

  2. Scoop and Shape the Cookies: I use an Australian tablespoon (20ml/4tsp) to scoop the dough and roll into a ball. Then I just flatten each ball on a lined tray, leaving at least 2cm in between to allow for spreading.

  3. Bake and Tap: You can tell these cookies are baked because they start to go a little golden on the edges. They puff up a bit in the oven, so I live to give the tray a couple of taps on the work top to flatten them out a bit.

  4. Cool: These cookies need to cool completely on the tray - but I'm not going to stop you from sneaking one while they're still a little warm...


How to Store Easy Gluten Free Peanut Butter Choc Chip Cookies


These cookies store really well. One they've cooked completely, just keep them in an airtight container at room temperature and they'll last at least a week - if they're not eaten first!
