My Favourite Fruit Mince
This fruit mince is the ultimate mix of fruity, rich and spiced - perfect for your annual Christmas cake, pudding, mince pies and more.
You wouldn't think I could be too opinionated about fruit mince, but I am. I've never met a fruit mince recipe that has absolutely everything I want. The right mix of fruit, the right spices and easy to use in recipes - this recipe has it all.
In my opinion this is the best blend of fruit. It has more glacé cherries than most recipes (they're my favourite - is that weird?), and the little bit of uncrystallised ginger in there gives it a little bit of zing. The ginger mellows out a bit during soaking, so don't be afraid of it being too spicy. Of course you can change the fruit to anything you want, and you can also swap the brandy out. Rum, whisky, or ginger beer for a non-alcoholic version are all good options.
This recipe makes enough to make two of my Christmas Cakes, or one cake and plenty of mince pies. It keeps well at room temperature for a couple of weeks, or in the fridge if you plan to store it for longer.
