Quick and Easy Gluten Free Brownies

You can't go wrong with a good brownie, right? That's especially true for these Quick and Easy Gluten Free Brownies. They're irresistibly fudgey and they have that shiny, crackly top. Plus, they're made all in one pot, and can easily be dairy free too!

I have strong feelings about brownies. I want them to be fudgey, but not too fudgey. They need fabulous chocolate flavour, and they definitely need chocolate chips. Oh, and walnuts? Absolutely not. I mean, I'm going to tell you that the world is your oyster. If you want nuts in your brownies, by all means add some in. But you can have those all to yourself!

How to Make these Quick and Easy Gluten Free Brownies

These brownies are all made in one saucepan, so there's not too many steps involved. Here's how to make them:


Melt the Butter and Sugar

Step one is to melt the butter in a medium to large saucepan along with the brown sugar. The sugar doesn't need to dissolve or anything, it's just a matter of warming over medium heat, stirring regularly, until the butter melts. Then set it aside for about five minutes to cool a bit.


Add the Eggs

It might feel a bit weird, but the next step is to whisk the eggs into the butter mixture. Don't worry, they won't scramble in the warm mixture, but if you're nervous just add one egg at a time and give it a good whisk after each one.


Whisk in the Dry Ingredients

We're nearly there already! Now the batter is ready for the dry ingredients. In goes some plain and self raising flour, salt, xanthan gum and cocoa powder. A good whisk to incorporate and on to the next step.

Fold in the Chocolate Chips

Now the fun stuff - in go the chocolate chips! I like to save a small handful to decorate the top, but if you can't be bothered just chuck them all in the batter. Try to work reasonably quickly here. The batter will still be a little bit warm, so the chocolate will start to melt.


Pour into the Tin

The final step is to pour the batter into a lined brownie tin and level it out a bit. Decorate with the rest of the chocolate chips (if you saved some) and it's into the oven!


Bake

The brownies need 25 - 30 minutes in a 170ºC fan oven. To tell if they're baked insert a skewer or toothpick into the middle. If there's still some wet batter give it another couple of minutes. If there are just a few moist-looking crumbs it's done! If the skewer comes out clean your brownies are likely to be a bit overcooked, but I'd still eat them quite happily!

Cooling and Cutting

Ok, I'm sorry. I'm always telling you to wait before you eat your delicious baked goods. But, it really is important for brownies to cool completely in the tin. That way, they can set up nicely and they won't be too gooey to cut.


If you want to get really clean cuts on your brownies, refrigerate them for 30 minutes before cutting and they'll firm up a bit more. The number of brownies you cut this into is really up to you. Anywhere between 10 - 18 pieces works well. 10 pieces will give you big, generous brownies, whereas 18 pieces will you brownies that are way too easy to grab on the way past the tin.


How to Store these Quick and Easy Gluten Free Brownies

These brownies keep really well for about a week in an airtight container at room temperature, and they are spectacular warmed briefly in the microwave and served with ice cream!
